This white bean chicken chili recipe was given to us by an acquaintance, and it is now one of our favorites! It’s a beautiful dish to prepare with leftover chicken or turkey. We only wish for colder conditions in California to prepare this soup. So, how to make white bean chicken chili recipe?


You can substitute tomatillos with additional minced tomatoes.Add red chili flakes or salsa if the broth is more spicy. Toppings available for selection include limes, cilantro, queso, avocado, sour cream, and tortilla chips.

  • 2 teaspoons cooking oil
  • 1 onion, chopped
  • 2 minced garlic cloves
  • 1 (14.5 oz) can chicken stock
  • 1 can of tomatillos (18.75 ounces), drained and diced
  • 1 (16-ounce) can of tomato chunks
  • 7 ounces of diced green chilies.
  • 0.5 grams of dried oregano
  • 1/2 teaspoon coriander seed pulverized
  • 1/4 teaspoon powdered coriander
  • 1 kilogram of diced, cooked poultry
  • 1 can (15 oz) of pinto beans
  • 2 ears fresh corn, kernels cut from cob 1 pinch salt and black pepper to flavor

Gather ingredients.

Heat oil and sauté onion and garlic until soft in a large pot.

Add tomatillos, tomatoes, and chilies to the broth, and then stir. Season with oregano, coriander, and cumin, then combine. Set to a boil, then lower heat and simmer for 10 minutes.

Add chicken, maize, and beans, and simmer for 5 minutes—season to flavor with salt and pepper.

We prefer to top our bowls with minced cilantro, crushed tortilla chips, and additional cheese, but feel free to add whatever you like! Add a spoonful of sour cream for a creamier texture, lime wedges for a citrusy boost, or jalapeno slices for additional flavor.

Freeze chili that has chilled in freezer containers. To use, partially defrost overnight in the refrigerator. In a saucepan, heat the ingredients, stirring intermittently and adding broth or water as needed.

In an airtight container, remains can be stored in the refrigerator for four or five days and in the freezer for up to three months.
